Raw Vegan Summer Corn Chowder Recipe

Non Fat – Makes 1 Serving

2 ¼ cups raw corn cut off the cob (approximately 2 cobs) –Reserve ¼ cup to mix inafter blending 

1 scallion

¼ cup of coconut water

2-3 cilantro or parsley leaves chopped

½ cup chopped celery (reserve ¼ cup for garnish)

5 grape tomatoes sliced into quarters (reserve for garnish)

Add coconut water, 2 cups of corn (cut off the cob), white portion of the scallion, and ¼ cup chopped celery to the blender. Blend until smooth. Finely chop the green scallion and the cilantro. Add blended corn mixture into a serving bowl and top with reserved corn, chopped cilantro, scallion, celery, tomatoes and fresh cracked black pepper. Enjoy immediately or chill in the refrigerator. If you are chilling before eating, you may need to blend again before adding garnishes.
