Raw Vegan Bolognese Sauce Recipe with Squash Noodles

Makes 2 servings

Main Ingredients for Sauce

1 cup Roma tomatoes chopped

½ cup unsulfured sundried tomatoes – not packed in oil

1 stalk of celery chopped

1 green onion chopped

¼ tsp Italian spice

4 large fresh basil leaves

¼ to ½ clove of garlic (adjust to taste)

1/3 cup soaked, rinsed, and drained walnuts

Noodles

2 yellow summer squash or zucchini spiralized or made into noodles with a peeler

Place all sauce ingredients into a food processor and pulse to desired consistency. I like to leave small chunks.Top with fresh basil. I also topped this with kale microgreens. Enjoy!
