Ginger Carrot Hummus – Bean-free, Oil-free

1 ½ cups peeled yellow summer squash or zucchini

2 stalks of chopped celery, leaves removed

1 cup carrots, peeled and chopped

3” of peeled ginger root

Juice of 1 lemon

¼ cup tahini

Place all ingredients into a high-speed blender (use tamper to keep everything moving) or food processor and blend until smooth. Serve with your favorite veggies for dipping. Enjoy!
