Makes 1 serving
1 cup almond milk (or nondairy milk of preference)
1/8 cup chia seeds
5 cherries pitted (reserve 2 cherries for garnish)
1 tbsp dragon fruit powderPour almond milk into a blender and dragon fruit powder and cherries with pits removed. Blend until smooth. In a 2-cup measuring cup, pour in the mixture from the blender and whisk in the chia seeds. Let sit about 15 minutes and whisk again to remove any clumps. Pour into a serving bowl and refrigerate until it is firm (4-5 hours or overnight). Garnish with remaining cherries and enjoy!
