Raw Savory Pea Soup, No Fat

Makes 1 Serving

Main Ingredients

10 oz fresh peas or frozen (thawed) (hold back ¼ cup for mix in)

1 tbsp chopped fresh parsley

2 oz coconut water or filtered water

1 tbsp lemon juice

1 green onion (reserve ½ tsp for garnish)

Garnish

½ cup fresh okra chopped into ½ inch pieces

Fresh cracked pepper

¼ cup peas (reserved from 10 oz)

4 cherry tomatoes cut into quarters

½ tsp green onion (reserved from main ingredients)

 

Add all main ingredients to the blender (hold back ¼ cup of peas to garnish and ½ tsp green onion) and blend until smooth and lightly warmed-but still raw. Garnish with peas, okra, green onion, black pepper, and cherry tomatoes. Enjoy.
