Raw Cucumber Noodles & Strawberry Mango Salsa Recipe – Fat Free

Makes 1 serving

Main Ingredients for Strawberry Mango Salsa

12 Strawberries de-stemmed and diced

1 Ataulfo Mango (small yellow bean shaped mango) peeled and diced

1 green onion – white and green parts finely chopped

¼ cup cilantro finely chopped

1-2 tbsp lemon juice fresh squeezed

1 tsp jalapeño finely chopped

Fresh cracked black pepper to taste

 

Toss all chopped ingredients in a bowl and set it aside to marinate.

Cucumber Noodles

1 large English cucumber spiralized or made into noodles with a peeler

Spiralize the cucumber or make noodles using a peeler. I lay down a kitchen towel or paper under the spiralizer to catch the cucumber water as I spiralize. The noodles will be really wet so you will want to put them in a colander lined with a kitchen towel or paper towel and let it sit in the sink to drain. Pat the top of the noodles with a towel and gently press down to help remove the water.

Take the cucumber noodles and make a nest with them in a serving bowl. Spoon the strawberry mango salsa into the middle of the cucumber noodle nest. Enjoy!
