Raw Corn Chowder Recipe – No Fat
Makes 1 serving
2 ¼ cups raw organic non GMO corn cut off the cob (approximately 2 cobs) –Reserve ¼ cup to mix in after blending
1 scallion
1/8 tsp chili powder
¼ cup of coconut water
2-3 cilantro leaves chopped
Add coconut water, 2 cups of corn (cut off the cob), white portion of the scallion to the blender and 1/8 tsp chili powder to the blender. Blend until smooth. Finely chop the green scallion and the cilantro. Add corn blend into a serving bowl and top with reserved corn, chopped cilantro, scallion, and a dusting of chili powder. Enjoy immediately or gently warm in a dehydrator.
