Raw Corn Salsa Stuffed Avocado Over Greens Recipe Makes 2 servings
Main Ingredients for Corn Salsa
1 ear of fresh organic non GMO corn cut off the cobb
12 min San Marzano tomatoes or cherry tomatoes cut in half and then thirds or in quarters
1 mini yellow bell pepper, seeded and finely chopped
1 green onion – white and green parts
½ stick of celery finely chopped
¼ cup chopped cilantro or parsley
2 tsp apple cider vinegar
1-2 tbsp fresh squeezed lemon juice
1 pinch of cayenne pepper – adjust to your taste
Main Ingredients for Serving
2 avocados cut in half, pitted and peels removed
4 cups of spinach or mixed greens
In a small bowl, add in apple cider vinegar, lemon juice, and cayenne pepper. Whisk until well combined. Chop all main ingredients for the corn salsa and place into a medium size bowl. Pour liquid mixture over chopped ingredients and stir until well combined. Divide the spinach onto 2 large plates. Place two avocado halves in the middle of each plate. Spoon the corn salsa salad over the avocados and spinach. Enjoy!
