Raw Watermelon Salsa Recipe – No Fat Makes 4-6 servings
4 cups chopped in ½ inch bits
2 cups Roma tomatoes chopped small
3 orange or yellow bell pepper seeded, de-veined
¼ to ½ seeded and de-veined jalapeno- depending on how hot and spicy you like it
¼ cup lemon or lime juice
2 scallions (both white and green)
Place all ingredients into the bowl and stir together until well mixed. Chill to allow flavors to come together.
Serve with cucumber rounds or raw corn chips.
