Raw Fat Free Gazpacho Recipe – 1 serving
Main Ingredients
3/4 cup English cucumber diced
¼ yellow or orange bell pepper, seeded and diced
2 tsp apple cider vinegar
2 medium tomatoes
½ scallion diced
¼ cup celery finely diced
¼ clove of garlic or 1/8 tsp of garlic powder
A few sprigs of cilantro or parsley
Chop all ingredients. Place the scallions, cucumbers, celery and bell pepper in a bowl and set aside. Place the tomatoes, garlic, cilantro or parsley, and apple cider vinegar in a food processor and pulse until it is the consistency you like. I prefer mine to be a little chunky. Add the processed ingredients to the bowl with the cucumber, scallions, and bell pepper and mix to combine. Chill for 1-2 hours to allow the flavors to come together. This soup will keep in the refrigerator for 2 days. Enjoy!
