Raw Watermelon Gazpacho Recipe – Fat Free
Makes 2-4 servings
7 cups watermelon – 4 cups chopped, and 3 cups chopped to be reserved for blending
1 cup Roma tomatoes chopped
3 mini bell peppers seeded, de-veined, and chopped
¼ to ½ seeded and de-veined jalapeno
¼ cup lemon or lime juice
1 cup English cucumber chopped
2 scallions (both white and green)
Add 3 cup of chopped watermelon to the blender with the lemon/lime juice. Blend until smooth. Add watermelon juice to a large bowl. Place all chopped ingredients into the bowl and stir together until well mixed.
