Raw Bibimbap Recipe – Makes 1-2 Servings
Main ingredients
1 cup Cauliflower riced (fresh or steamed*)
1 cup Carrots julienned
1 cup of Red and Orange Peppers julienned
1 cup Purple Cabbage shredded
1 cup Broccoli (fresh or steamed*)
1 cup Mushrooms (Baby Bella or White Button)
3 tbsp Coconut Aminos (soy free) or Braggs Liquid Aminos
3 cups Spinach chopped
Slice washed mushrooms and place them in a shallow bowl with the coconut aminos or Braggs liquid aminos to marinate for 30 minutes-stir occasionally. Add the cauliflower (raw or steamed) to the food processor and pulse until it has the consistency of rice. You can also hand chop it. In a large bowl, place the spinach in the bottom and then arrange each of the ingredients around the bowl. Place the marinated mushrooms in the center of the bowl and drizzle the remaining marinate mixture over the veggies.
*Steaming the cauliflower and broccoli can aid in digestion if you are someone who has trouble digesting these raw.
