Raw Asian Cabbage Slaw and Almond Butter Ginger Dressing Recipe

Raw Asian Cabbage Slaw and Almond Butter Ginger Dressing Recipe – Makes 2 servings

Main ingredients (approximately 4 cups per serving)

4 cups of shredded red/purple cabbage

4 cups shredded savoy cabbage

2 cups shredded carrots

1 to 2 green onions thinly sliced on the bias

1/2 cup chopped celery

1/4 to 1/2 cups chopped cilantro

1/2 tsp black sesame seeds to garnish

1/2 tsp very thinly sliced ginger (use a mandolin if possible or use a vegetable peeler)

 

Toss all ingredients together and separate into 2 bowls

Sauce ingredients (approximately 3 tbsp. per serving)

¼ cup Raw Almond Butter

2 tbsp. fresh lemon or lime juice

2 tbsp. Braggs Liquid Aminos or Coconut Aminos—for soy free option

2 tbsp. filtered water

1 pitted Medjool Date

1 tsp peeled grated fresh ginger

 

Blend until smooth. Pour over main ingredients and toss. Enjoy.
