Raw Lo Mein Recipe – Makes 2 servings

Main ingredients

2 medium zucchini spiralized

1 cup mung bean sprouts

½ cup shredded carrots

½ cup snap peas sliced in half or thirds

2 small red and yellow bell peppers

1/4 cup fresh cilantro roughly chopped

1/8 cup chives finely chopped

½ tsp black sesame seeds – for garnish

Sauce ingredients

2 tsp raw tahini butter

6 chives

2 tbsp water

1 medjool date pitted

1 tbsp coconut aminos (soy free) or Braggs liquid aminos (contains soy)

3 tbsp lemon juice-fresh squeezed

Toss all sauce ingredients into the blender and blend until smooth. Pour over noodle mixture and toss. Garnish with black sesame seeds and enjoy!
